Southern Fried Catfish ~

6 catfish fillets (cleaned and skinned)
Group 1
2 cups yellow or white cornmeal
1 cup flour
salt & pepper to taste
1/2 tsp cayenne powder
Group 2
1 egg
1 cup milk

**oil for deep frying

1.  Combine
group 1; mix thoroughly, set aside.

2.  Mix group 2; beat lightly.

3.  In a deep fryer, heat oil to about 370 degrees.

4.  Dip catfish filet into egg mixture; then coat with corn meal and flour mixture.

5.  Place catfish in hot oil and fry for about 3-4 minutes.

* If you are doing a fish fry, you will have to add more of the corn flour mixture and
egg bath.  Keep in mind the ratio of corn flour to flour is 2:1  (2 parts corn flour to 1
part flour).
** You may use a deep frying pan to fry the fish.  Never fill the pan with more than
half full of oil.  As the fish are frying, oil can overflow causing a fire.

Hush Puppies
Group 1
1 cup yellow corn meal (water ground)
1/2 tsp double-acting baking powder
1/2 tsp salt or to taste
optional 2 tbsp minced onion

Group 2
1 egg
1/4 cup milk

1.  Combine group 1 together.  Beat group 2 together; then mix with group 1.

2.  Form into finger-shaped balls.  Deep fry in 370 degree oil until golden brown.
