Tequila Salmon ~  Marinaded, grilled salmon with fresh vegetables and
Sesame-Chive Butter on a bed of Soba Noodles.  From
Great Alaska Seafood

Canola Oil
tequila
soy Sauce
3 limes
3 lbs unsalted butter
chives or green onions
¼ cup sesame seed oil
salt and pepper to taste
soba noodles
salmon
red pepper
green pepper
red onion
celery
carrots
salmon

Marinade:
1. Marinate salmon in equal parts of Canola Oil, Tequila and Soy Sauce.
2. Squeeze 3 limes into marinade and lay the remainder of the squeezed lime in
the marinade also.
3. Marinade for 2-3 hours before grilling.

Sesame-Chive Butter:
1. Blend 3 pounds of unsalted butter with 1/4 cup of sesame seed oil and add
the chives (or green onions) to the blend.

2. Add salt and pepper to taste.

Fresh Julienne vegetables:
1. Slice the uncooked red pepper, green pepper, red onion, celery and carrots
into long narrow julienne strips.
2. Refrigerate until serving.

Grilling:
Remove the Salmon from the marinade and grill until done to suit you.

Presentation Place the Salmon on the Soba noodles. Top with the
Sesame-Chive Butter and sprinkle
with fresh Julienne vegetables.
