
| Seafood Enchiladas ~ The enchilada recipes are all made with a Cream Sauce or a Mustard & Cream Sauce. Most seafood and cream sauces do not require baking and can be used as a Seafood Main Dish by themselves. As many of these recipes have fast cooking times, it is suggested that you prepare your accompaniments a little in advance. I find it easier to prepare the corn tortillas in advance also. (First make them soft by dipping in hot oil). The addition of cheese over the top is optional ~ these are already very rich.
