Apple Enchiladas ~ "I have made these many times. It's from Southern Living
that I copied years ago.  You can use cherry and blueberry as well.  Glenda"

one 21 oz canned fruit filling
6-8 inch flour tortillas
1 tsp cinnamon
1/3 cup butter
½ cup sugar
½ firmly packed brown sugar
½ cup water

1.  Spoon fruit evenly down center of each tortilla, sprinkle with cinnamon.
Roll up each, placing seam side down in greased baking dish.

2.  Bring butter, sugar, brown sugar and water to boil, reduce to simmer for 3
minutes, stirring constantly.  Pour over enchiladas, bake 350° F. for 20
minutes.  Top each with grated cheese, if desired, and top with cool whip.
Using remaining syrup to plate them on.

I have prepared these the nite before occasionally, and put in oven to bake the
next morning for Sunday brunch.
