

| Ukoy ~ a type of pancake or foo yung 1 cup flour 1 egg 1 clove garlic minced 1 tsp salt 2 cups mung bean (mungo) sprouts ( known in the US as "bean sprouts" 1 tsp baking powder 1 2/3 cups shrimp juice ( remove the heads and crush the shrimp in 1 2/3 cups water ) ( many times shrimp shells can be boiled to make a shrimp stock; boil the shells, strain and reserve the resulting stock...it freezes well. ) 2 green onions 12 shrimp oil for frying ( enough to lightly grease the pan ) 1. Mix flour, egg, shrimp juice, baking powder, garlic and salt. Blanch the mung bean sprouts and shrimp. Finely cut green onions and mix all ingredients together. 2. When oil is hot enough (medium high) , fry the mixture in the shape of pancakes or foo yung. The ukoy will be done when the outside is brown and crispy. 3. Serve with a dipping sauce made with vinegar, salt, pepper and garlic.
