Egg Fu Yung III ~ Shrimp Egg Fu Yung
5 eggs

2 tbsp vegetable oil
1 carrot, grated
5 eggs, beaten
½  lb shrimp (if using cooked shrimp, add just before the end of cooking)
1 tbsp light soy sauce
pinch of five-spice powder
2 green onions (scallions), chopped
2 tsp sesame seeds
1 tsp sesame oil

1.  Heat the wok, then add the oil.  Swirl around until oil is very hot.

2.  Add the grated carrots, stir fry for 1-2 minutes.

3.  Push the carrots to one side and add the beaten egg.  Cook, stirring gently for
about 1-2 minutes.

4.  Add the shrimp, soy sauce, and five-spice powder and stir.  Stir fry the mixture
for 2-3 minutes, or until shrimp changes color and the mixture is almost dry.

5.  Turn the shrimp fu yung onto a plate and sprinkle the scallions, sesame
seeds, and oil.

Serve immediately.
