
| Dinner Crêpes ~ 2 cups all-purpose flour 2 eggs 1½ cups milk 3 tbsp sugar 2 tbsp butter, melted 3 egg yolks pinch of salt 1. To make the crepe batter, beat together the flour, eggs, sugar and salt. 2. Add the 1½ cups milk gradually, beating continuously. Then whisk in the melted butter. Set aside to rest. 3. Rub a small frying pan (or crepe pan) with a paper towel dipped in oil before cooking each crepe. Add the batter to the pan using a small ladle. 4. Cook the first side for 1 minute, then turn and cook the other side for another minute. Repeat with the rest of the batter. 5.
