Dinner Crêpes ~

2 cups all-purpose flour
2 eggs
1½ cups milk
3 tbsp sugar
2 tbsp butter, melted
3 egg yolks
pinch of salt

1.  To make the crepe batter, beat together the flour, eggs, sugar and salt.

2.  Add the 1½ cups milk gradually, beating continuously.  Then whisk in the
melted butter.  Set aside to rest.
3.  Rub a small frying pan (or crepe pan) with a paper towel dipped in oil before
cooking each crepe.  Add the batter to the pan using a small ladle.

4.  Cook the first side for 1 minute, then turn and cook the other side for another
minute.  Repeat with the rest of the batter.

5.  Finish by folding in half then fold in half again, or use as required in other
recipes.
