
| Bite Size Cream Puff ~ From the online Crisco Kitchen http://www.criscokitchen.com/home.shtml Puffs: 1 cup (250 mL) water ½ cup (125 mL) Crisco Shortening - Regular or Golden 1 cup (250 mL) all-purpose flour Pinch salt 4 eggs Filling: 2 pkgs (92 g) vanilla instant pudding (4 serving size) 2 cups (500 mL) milk Sifted icing sugar Equipment: Electric mixer Baking sheet Puffs: 1. Heat water and Crisco Shortening in saucepan to a rolling boil. 2. Add flour and salt all at once. Stir vigorously over low heat for about 1 minute, or until mixture leaves sides of pan and forms a ball. Remove from heat, cool 5 minutes. 3. Add eggs, one at a time, beating at medium speed of electric mixer until thoroughly mixed after each and until smooth and glossy after the last egg has been added. Place a piece of plastic wrap directly on surface of dough and chill 1 hour. 4. Preheat oven to 375°F (190°C). 5. Drop dough from small spoon onto greased baking sheets, using about 1 tsp (5 mL) for each puff. 6. Bake at 375°F (190°C) for 20 to 25 minutes, or until puffed and golden. Remove from oven and immediately prick side of each puff with tip of a pointed knife to allow steam to escape. Cool completely. Filling: 7. Combine pudding mix and milk in small bowl. Beat at low speed of electric mixer 1 minute. Let stand 5 minutes. 8. To serve, cut puff in half horizontally with sharp knife. Spoon filling into bottom. Replace top. Dust with icing sugar before serving. Preparation Time: 20 minutes Baking Time: 25 minutes Chilling Time: 1 hour Makes: 85 puffs Helpful Hints: Don't worry about the appearance of the mixture after adding the first eggs. Mixture won't come together and get smooth until all eggs are added. Puffs can be prepared in advance, but don't fill until a few hours before serving. Prepared lemon pie filling is also a tasty filling. Place a fresh raspberry or strawberry half on top of filling before replacing top for a flavourful surprise. Puffs are great to serve as finger food but they also make a wonderful dessert. Fill with whipped cream or ice cream and drizzle with warm or cool chocolate sauce, caramel sauce, raspberry sauce or maple syrup. |
