Sophia's New England Clam Chowder
3 slices bacon chopped small
3 cans (6½) ounces minced clams
2 cups peeled and diced potatoes (dice small)
1 medium onion
¼ cup flour
2 cups milk
¾ cup light cream
salt to taste ( ½ tsp )
⅛ tsp pepper
Fry bacon until crisp, remove bacon & set aside. Drain clam liquid into bacon drippings. Set
clams aside for now. Stir in onions and potatoes, reduce heat to medium, cover and cook until
vegetables are tender, Blend in flour until smooth, Stir in milk, Stir in clams, bacon, cream and
salt & pepper. Reduce heat to low, cover and continue until chowder thickens (10 - 15 minutes).
Serves 6
