Manhatten Clam Chowder ~ Sophia G - Fayetteville, North Carolina

3 can (6½ ounces) chopped clams, drained, reserve liquid
¼ cup salt pork, cubed
2 cups carrots, finely diced
2 cups onion, chopped
1½ cups celery, chopped
¾ cup bell pepper, chopped (for color use, red, green , or yellow)
1 clove garlic, minced
1 tsp thyme, dried
1 bay leaf
1 cup fresh or canned tomato, coarse chopped
4 cups potatoes cut into ½ inch or smaller cubes
salt & freshly ground pepper to taste
8 cups water

1.  Chop and pork, put in a kettle, cook until it has rendered it's fat.  Add the carrots,
celery, onions, and bell pepper. Cook for 5 minutes, stir often.

2.  Add the garlic, thyme, and bay leaf.  Add the reserved clam liquid, 8 cups of water, and
tomatoes.  Cook for 15 minutes.

3.  Add clams and potatoes, salt & pepper to taste, simmer for 1 hour.
