
| Cheesy Chicken Corn Chowder ~ 8/18/1999 1 chicken whole breast 4-5 cups chicken broth ½ cup chopped onion ½ cup chopped celery ½ cup chopped carrots 1 or 2 tbsp chopped fresh parsley 4 tbsp butter 1 10 oz cream of chicken soup or cream of mushroom, 1 8¾ oz whole kernel corn 1 small can of cream corn ½ cup milk 1 large potato diced small ¼ cup shredded American cheese ¼ cup shredded cheddar cheese 2 tbsp chopped pimento ~ optional noodles ~ optional 1. Stew the chicken with salt, pepper, onion, carrots and parsley. 2. Strain the chicken and remove skin and bones. Dice chicken 3. Sauté celery, carrots, onions, parsley and salt and pepper (to taste) in butter. 4. Add chicken broth, cream of chicken soup, corn, cream corn, chicken, potato, and cook until potatos are tender. Add cheese and milk and heat through. Note: If putting noodles in add with the potatoes. More cheese can be added if you want. Tid Bit:: How come the older we get the later old age starts? |
