Chile with Cheese ~ Chile with Cheese wrapped in a filo dough.  ( A remake of the
Greek "tyropeta")


Tyropeta ingredients:
1 pound feta cheese, crumbled
2 egg yolks
1 whole egg
3 tbsp chopped parsley
dash finely ground black pepper
¾4 pound butter, melted and kept warm
1 pound filo dough

Chile Triangles ingredients:
1 pound Manchego Cheese crumbled
2 egg yolks1 whole egg
3 tbsp chopped hot green chile
dash finely ground black pepper
¾ pound butter, melted and kept warm
1 pound filo dough

1.  Mash Cheese with a fork.  Add egg yolks, egg, parsley (or green chile), and
pepper.

2.  Melt butter in a sauce pan.  Keep warm, but do not allow to brown.

3.  Lay a sheet of filo on a large cutting board.  Brush with the melted butter.  Cut
into strips about 1½-2 inches wide.  Place ½ teaspoon of the cheese mixture on
each strip about 1 inch from the base.  Fold to form a triangle.  Continue until all      
cheese mixture and filo have been used.

4.  Place triangles side by side in a shallow roasting pan or baking sheet.*

5.  Bake at 350o F for about 20 minutes, or until golden brown.
Serve at once.

Note: These triangles freeze well.  Before serving, remove from freezer and let
stand 15-20 minutes.  Bake at 325 degrees F until golden brown.

* Pan must have four joined sides, otherwise butter will fall to bottom of oven and
burn.
