Tsinan Red Cooked Chicken ~ First fried then steamed.

2-3 pound broiler/fryer chicken
* Group 1
3 slices fresh ginger root, shredded
6 scallions (green onions), finely chopped
1½ tsp sugar
3/4 tsp salt
¼ cup soy sauce
1½ tbsp dry sherry
½ tsp freshly ground black pepper
¼ tsp five spice powder

oil for deep frying

1.  Mix ( Group 1 ) in a bowl.  Rub the chicken with this mixture, inside and out, and
leave to season (marinate) for 2 hours.  Then rub the chicken with the mixture
once more and leave to season for a further 2 hours.

2.  As soon as the marinating ingredients have dried on the chicken, place it in a
wire basket and deep fry it in hot oil for 8 - 10 minutes until golden brown.  Drain
the chicken and stuff it with the remainder of the marinade.  Place it in a
heat-proof dish and steam for approximately 40 minutes, or until the meat is
tender.

3.  Serve the chicken whole.  It should be tender enough to take apart with
chopsticks.  Serve with cooked rice and a variety of dips.
