
| Three Cup Chicken ~ Three Cup Chicken ~ San Bei Ji There are many variations of this recipe. Mainly the amount of garlic and ginger. Experiment with different amounts to suit your taste. The (3-cup) refers to the 3 cups of liquid being used. 1 chicken, about 2-3 pounds, cleaned. 6 gloves of garlic 1 cup rice wine 1 cup sesame oil 1 cup light soy sauce 10 slices of ginger 3 tbsp of sugar 2 cups basil (Asian not Italian) 2-3 green onion, cut into 1-inch sections 1. Cut the chicken into double mah-jong size pieces. 2. Heat the wok, then add the sesame oil, add garlic and ginger, stir-fry until fragrant. 3. Add chicken pieces, stir-fry until it changes color (about 3 minutes). 4. Season with sugar, soy sauce and rice wine. 5. Bring to a boil, reduce heat to medium, continue to cook until the liquid is reduced by half. 6. Return the heat to high, add basil and green onion. Serve with white or fried rice. Mah-jong is bite sized, double mah-jong is about 1-inch by 2-inch pieces. Note: The usual soy sauce bought in supermarkets is "light soy sauce". Dark Soy Sauce, a basic ingredient for Chinese cooking is somewhat heavier both in color and density. Check your local Chinese or Asian grocery. |
