
| Stir Fried Chicken with Mushrooms ~ ( Aioan Chua Noeung Phset Kretni ) Cambodia 1 whole chicken 4 cloves garlic, crushed ½ tsp fresh ginger, finely grated 2 tbsp vegetable oil 1 cup water 2 tsp sugar 2 tbsp cilantro, chopped (fresh coriander leaves) 5-6 dried Shiitake or Chinese black mushrooms 1. Remove stems, reserve for soup stock. Soak mushrooms in warm water for 30 minutes. Drain well, cut caps into strips about ½ inch wide. 2. Cut chicken into small pieces with cleaver, chopping through bones. 3. Heat a wok over high heat, add the oil. Fry garlic and ginger in the hot oil for a few seconds (do not allow garlic to burn). Add chicken and stir-fry until lightly browned. 4. Add mushrooms, water and sugar, cover and simmer until chicken is cooked. Sprinkle with chopped coriander. Serve with Jasmine rice. Serves 4-6 |
