
| Southern Fried Chicken ~ 2 1/2 to 3 lb chicken cut into serving pieces buttermilk to use as bath 1 cup flour 1 1/2 to 2 tsp salt or to taste 2 tsp black pepper, freshly ground oil for fryingl 1/4 pound butter Tabasco if desired 1. Put the chicken pieces in a bowl, add buttermilk to cover. Stir in Tabasco. Place in refrigerator for at least 1 hour. 2. Mix flour, salt, and pepper in a *bowl (large enough to hold chicken pieces). 3. Coat the chicken pieces with the flour mixture (2-3 pieces at a time). 4. Heat oil, and butter in a frying pan (preferable a large cast iron pan). The pan should hold the chicken pieces in one layer without overcrowding or touching. 5. On high heat. Add the pieces, skin side down and cook until golden brown. Turn the pieces and reduce the heat to medium low. ( Continue cooking until all pieces are cooked to a perfect golden brown....make sure they are cooked through. 6. Cooking time should be 20-30 minutes. Drain on paper towels. |
