Chinese Roasted Chicken  ~ Goes great with a variety of menus.
Eaten with other dishes or alone with Mandarin Pancakes (Chinese
version of a tortilla)

1 whole chicken, 3-4 pounds
1 clove garlic
2 slices ginger root
2 tbsp soy sauce
1 1/2 tsp salt
1 1/2 tbsp vegetable oil

1.  Wash the chicken, inside and out, then dry.  Place chicken in an open airy
place to dry for 1 hour.

2.  Crush the garlic, and shred the ginger, then mix together and chop very fine.  
Combine the garlic and ginger mixture with the soy sauce, salt and vegetable oil.  
Blend thoroughly.

3.  Rub the mixture all over with this mixture.

4.  Roast the chicken in a pre-heated 400 degree oven for 1 hour.

Serving:  Cut the chicken into small pieces...or as you prefer.  You may want to
make this a party dish by providing Mandarin Pancakes.  Your guest would wrap
the pieces of chicken in the pancake and eat as you would Peking Duck.
