
| Red Cooked Chicken ~ "Red Cooked" a form of Chinese stewing. Most meats can be red-cooked, Red-Cooked Chicken is a favorite. 4-5 pound chicken or capon 2 medium sized onions 3 scallions ½ cup soy sauce 3 slices ginger root 2½ tsp sugar ½ tsp salt ¼ cup dry sherry 1. Wash the chicken thoroughly, inside and out; then place it in a heavy pot with one quart of water. Bring to the boil and continue boiling for 5 minutes, turning the chicken over a few times. Pour away all the water and impurities. Meanwhile, slice the onions thin and cut the scallions into 2 inch pieces. 2. Put the chicken into a heatproof casserole, pour over ¾ cup of fresh water, then add the soy sauce, ginger, onions, sugar, and salt. Bring the liquid to a boil, then put the casserole in an oven preheated to 375º F. Cook in the oven for 1¼ hours, turning the chicken over 2 or 3 times. Remove the casserole from the oven and sprinkle the scallions and the sherry over the chicken. Return the casserole to the oven for an additional 30 minutes. Serves 4-6 |
