
| Chinese Pepper Chicken ~ This roasted chicken recipe takes time, however it is well worth the wait. The crispy skin is full of flavor. 1 whole chicken, 3-4 pounds. 2 tbsp salt 1 1/2 tsp freshly ground black pepper 3 slices of ginger root 2 1/2 tbsp soy sauce 2 1/2 tbsp vegetable oil 1. Wash the chicken, inside and out, then dry. Place chicken in an open airy place to dry for 1 hour. 2. Mix salt and pepper together and dry roast in a saucepan over low heat, stir often. This should take about 3-4 minutes. 3. Shred the ginger and chop very fine. Rub the chicken with the ginger and 1/2 of the the pepper mix, both inside and out. Refrigerate the chicken overnight. 4. Repeat the rubbing of the chicken with the remaining pepper mix, and again refrigerate overnight. 5. Prior to roasting the chicken, beat together for about 15 seconds the soy sauce and oil. Rub chicken inside and out with this mixture. 6. Place chicken in a 300 degree oven for 2 hours, then increase oven to 400 degrees for an additional 10 minutes. The chicken should be browned and the skin crispy. Serves 4-6 |
