Kung Po I   ~ Kung-po chicken is a hot and spicy chicken dish.  This
dish goes well with a bowl of
white rice.

1 1/2 cups chicken breast meat

* Group 1
1 tsp salt
4 tsp cornstarch

* Group 2
3 tbsp superior stock  or chicken stock
2 tsp vinegar
2 tsp tomato puree
2 tbsp water
1 tsp sugar

* Group 3
2 dried red peppers
1 small onion - minced very fine.

2 tbsp veg oil
1 tsp chile oil


1.  Cut chicken breast into small cubes about 1 inch wide and 1/2-inch thick; rub
salt and 2 teaspoons of cornstarch from
group 1.

2.  Chop the peppers and discard the seeds.  Mix the remaining cornstarch (2 tsp)
with
group 3.

3.  Chop the onion very fine.  Heat a wok or frying pan over high heat.  Add the
vegetable oil; then chicken and stir-fry for about two minutes.  Remove and keep
warm.

4.  Add ingredients from
group 3; stir-fry for about 1-2 minutes, then add chile oil,
and ingredients from
group 2; stir until mixture thickens.  Return chicken and
continue to stir-fry for another 1 1/2 minutes.

5.  Serve on a well heated dish
