Ginger & Green Onion Chicken ~ Ginger & Green Onion Chicken
This is a cold served chicken dish.  Ideal for a pot luck where you
may have trouble keeping "your" part of the pot-luck hot.

1 broiler-fryer chicken (about 3 pounds)
1 piece fresh ginger root (2 x 1-inch)
1¼ tsp salt
½ tsp pepper
water to cover
1/3 cup vegetable oil
8 green onions, finely chopped
3 tbsp grated fresh ginger root
2 tsp white vinegar
1 tsp soy sauce
Pai Fan ~ Cooked Rice

1.  Remove giblets from chicken an reserve for another use.  Rinse chicken and
place in a large saucepan or Dutch oven.  Add sliced ginger, 1 teaspoon of
salt, ¼ teaspoon of the pepper and enough water to cover chicken.  Cover
and bring to a boil over high heat.  Reduce heat and simmer until tender,
about 40 minutes.  Let chicken stand in water until cooled.
2.  Drain chicken and refrigerate until cold.  Cut chicken into serving size pieces
(double-mahjong).
3.  Combine remaining ¼ teaspoon salt and ¼ teaspoon pepper with remaining
ingredients in a jar with a lid.  Cover jar a shake well.  Refrigerate 1 to 2 hours.
4.  Place chicken pieces in a serving bowl.  Shake oil-ginger mixture and pour
over chicken.  Serve with
Pai Fan ~ White Rice

Mahjong = bite size, Double mahjong will give you two pieces from a drum stick
or 3 pieces to a chicken breast half.
