Deep Fried Marinated  Chicken ~ Similar to Deep Fried Eight
Piece Chicken, the biggest difference is that the chicken is marinated
for at least 2 hours.  For a variation try
Chicken in Bread Crumbs below.

3-4 pound fryer chicken
1 large onion
2 slices fresh ginger root
2½ tbsp soy sauce
1 tbsp soy jam or paste
1 tbsp hoisin sauce
2½ tsp sugar
1½ tbsp sherry
2½ tbsp cornstarch
oil for deep frying

1.  Chop the chicken into 12-15 serving pieces or double mah-jong pieces
and sprinkle them with salt.  Chop the onion as fine as possible.  Shred
the ginger and chop in the same way as the onion.  Mix the onion, ginger,
soy sauce, soy paste, hoisin sauce, sugar, and sherry.  Rub the pieces of
chicken with this mixture and leave to marinate for at least 2 hours.  After
marinating, dust the chicken with the cornstarch, discarding any excess.

2.  Deep fry in hot oil until done, drain before serving.

Chicken in Bread Crumbs

Follow instructions above.  After marinating the chicken pieces, dip them in
lightly beaten egg and dredge them in bread crumbs.
