
| Deep Fried Eight Piece Chicken ~ Chinese version of home fried chicken. In China, what is called deep fried is frying in no more than 3/4 - 1½ cups of oil. Yes...they also fry in deep fryers. 3-4 pound fryer chicken 2 slices fresh ginger root 2½ tsp salt 1 egg 2½ tbsp flour 1¼ cups oil 1. Clean the chicken and chop into eight pieces (or more if you like). Shred the ginger and chop it very fine. Mix the ginger with the salt. Rub the chicken pieces with this mixture. Beat the egg lightly, blend with flour to a smooth batter. Coat the chicken. 2. Heat the wok (or large frying pan). When hot add the oil. When the oil is very hot, add 3-4 pieces of chicken, stir them around with a metal spoon. Cook until chicken is done. Keep chicken warm. Continue deep frying until all the pieces have been cooked. 3. Chicken cooked in this manner is best eaten with a dip or mix. Such as a Salt & Pepper mix. Serves 4 |
