Drunken Chicken  ~ This is not the drunken chicken where it is deep
fried in a large pot.  This is more of a Chinese hors d'oevre.  The
"soaking time" is quite long, so you will have to prepare this dish far
in advance of your party.

1 three-pound chicken, cleaned.
6-7 cups of water
Group 1
2 tbsp salt
2 medium-sized onions
6 slices fresh ginger

Group 2
2½ + cups rice wine

1.  In a large pot, bring the water to a boil, then add
Group 1.  Allow to boil for 5
minutes.

2.  Add the chicken and continue to boil for an additional 15 minutes.

3.  Remove from heat and allow to sit for 3 hours, then drain and discard the
water and
Group 1.

4.  Place chicken in a large bowl, add
Group 2.  Insure the chicken is covered
turning several times for the next 24 hours.  Allow to soak at least 36 hours.

5.  Cut the chicken into double mah-jong size pieces.

6.  Arrange on a serving platter.

To serve:  Serve cold,  allow your guests to use toothpicks, or serve in small
serving dishes.


Mah-jong is bite sized, double mah-jong is about 1-inch by 2-inch pieces.
