Chinese Curried Chicken ~  

3-4 pound fryer chicken
½ pound potatoes
2 large onions
5 tbsp vegetable or corn oil
1 tbsp salt
2½ - 4 tbsp curry powder (according to taste)
2½ tbsp soy sauce
3/4 cup chicken stock or broth
3/4 cup coconut milk
1¼ cups milk

1.  Clean the chicken and chop into 12-16 pieces.  Peel the potatoes and cut
them into chunks about the same size as the chicken.  Slice the onions thin.

2.  Heat the oil in a large saucepan.  Add the onions, salt, and curry powder,
cook over high heat for 2 minutes.  Add the chicken pieces and continue to
stir-fry for 5 minutes.  Add the soy sauce, and stir-fry for a further 2 minutes.
Pour in the chicken stock and coconut milk.  Bring to the boil and simmer for
30 minutes.  Add the potato pieces and milk.  Bring to the boil and
simmer for a further 30 minutes, turning the mixture over every 10 minutes.
