
| Crispy Chicken ~ It's the technique that makes this dish a family favorite. The preparation is somewhat long so when you decide to use this recipe make sure you plan a day in advance. Another Chinese chicken dish that is similar is Crackling Chicken. 3-4 pound chicken 1 tbsp salt ~~~~~ * Group 1 3 slices ginger 2 1/2 tbsp chopped cilantro (fresh coriander) 2 1/2 tbsp soy sauce 1/8 tsp (or less) five spice powder 2 1/2 tbsp dry sherry ~~~~~ oil for deep frying 1. Clean the chicken and rub inside and out with salt. Leave to dry overnight. 2. Shred the ginger and mix with group 1. Rub chicken with group 1 twice during in the next 2 hours. Leave chicken to dry in an airy place. 3. Preheat an oven to 300 degrees, roast chicken in pre-heated oven for 1-1/2 hours. Drain the chicken then place in a wire basket and deep fry in hot oil for 6-7 minutes....at this time the skin will have become very crispy. Serves 4-6 |
