
| Chicken Cordon Bleu ~ Blue Ribbon Chicken....a classic modified to add Green Chile butter chicken breast, boned, skinned, pounded to 1/8 inch thickness ham, cooked and sliced Swiss or Monterey Jack cheese, sliced roasted green chile, chopped or minced plain dried bread crumbs In a skillet heat half the butter over medium heat until bubbly and hot. Add chicken and cook briefly on each side (just until no longer pink). Transfer chicken to plate, place ham on top, followed by chile, and then cheese. From the narrow end, roll chicken to enclose fillings. With a toothpick secure the roll and transfer to a shallow baking dish. Preheat oven to 400 F In the same skillet heat remaining butter over low heat until hot, add bread crumbs to combine. Roll chicken in bread crumb mixture, bake until cheese is melted, this will only take about 3 minutes. Remove toothpick and serve. |
