Chicken & Cashews Szechuan Style ~

7 oz chicken breast
½ egg white
1 tsp cornstarch
pinch of salt
oil for frying

3 green peppers
3½ oz bamboo shoots, parboiled if not from a can
2 oz cashew nuts
1 tsp garlic, finely chopped
1 tbsp rice wine or sherry
pinch MSG (optional)

for the sauce:
1 tbsp soybean paste
1 tbsp soy sauce
2 tsp sugar
½ tsp vinegar
¼ tsp salt

1. Dice the chicken breasts into ½-inch pieces; dip in the egg white and then
in the cornstarch mixed with a pinch of salt.
2. Heat some oil until fairly hot and fry the diced chicken. Drain.
3. Slice the peppers in half vertically; remove the seeds, stem, and pith; cut
into ½ -inch squares.
4. Cut the parboiled bamboo shoots to the same size as the peppers. Mix the
sauce ingredients together in a bowl.
5. Fry the cashews in moderately hot oil until they are lightly browned and crunchy.
6. Heat 2 tablespoons of oil in the wok and stir-fry the garlic until it releases its
aroma; add the bamboo shoots and the peppers and stir-fry.
7. Add the chicken and cashew nuts, sprinkle with rice wine, and pour in the
sauce.  Stir-fry all the ingredients briefly over a high heat and add a pinch
of MSG (optional) to heighten flavor.

This goes well with Five Color Fried Rice, Egg Rolls and Hot & Sour Soup.

MSG (monosodium glutamate) is found in the spice section of your local
supermarket.  It can be found as Ac'cent (a name brand) but is much more
expensive than regular store brand MSG. There is no different in taste,
Ac'cent just costs more.

There are some reports that MSG causes headaches, check with your
Doctor.  It should be noted that MSG is always used in very small amounts
MSG:  MSG or Monosodium Glutamate can be
found in most supermarkets.  Used to enhance
flavor, but may have some side effects.  
Ac'cent is a
name brand that costs more than the store brand.
