Stuffed Chicken Breasts ~  I'm having stuffed chicken breasts and yellow garden
rice.  I usually make two, although I'm one. Love the leftovers.  ~~Cotton~~

2 boneless, skinless chicken breasts
2 slices mozzarella cheese
2 green onions, tops only
salt, cayenne to taste
dash of oregano
2 tsp Italian salad dressing
1 egg, beaten
½ cup Italian seasoned bread crumbs

1.  Put chicken between sheets of plastic wrap, and pound with mallet till flattened
as much as possible.

2.  Season with salt, cayenne, and oregano. Place cheese on, and brush with
dressing.

3.  Roll up and secure with toothpick or small skewer. Dip in egg, then in bread
crumbs.  Repeat.

4.  Place in foil-lined pan, cover with foil, and bake at 350º F. for 40 minutes.
Remove foil and bake another 10 minutes, to brown slightly.
