Fried Cheese ~ Always great when an appetizer is needed.  Fried kefalotyri or
kasseri cheese wedge are just the thing at parties or just lounging around.

Kefalotyri or kasseri cheese, sliced lengthwise in ¼-inch-thick wedges
(about 1 pound for 4 people)
2 egg yolks minced with 2 tablespoons water
flour
olive oil
2 lemons, cut into quarters

1.  Dip cheese slices into egg-yolk mixture, then into flour, coating each side
evenly.  Shake off excess flour.

2.  In a 10-inch skillet, heat a ¼-inch layer of olive oil.  When the oil begins to
smoke, add the cheese.  Fry first on one side, then the other.

3.  Remove from skillet and squeeze some lemon juice on each slice.  Serve
immediately.  Allow 2 slices for each person.
