Carne Adovada II ~ Marinated Pork, then baked   ~ ChileMasters


4 cloves garlic
1 cup *chile caribe
1 tbsp salt
5 lbs pork steaks (lean)
1 tbsp oregano

1. Add garlic, salt, and oregano to chile caribe.

2. Place pork steaks in large, glass baking dish and pour chile caribe mixture
oversteaks. Cover and refrigerate for 8-24 hours.

3. Place drained, marinated steaks in a 350°F oven and roast for 50 minutes.

*Chile Caribe
Chile Caribe is no more than toasted crushed red peppers, like you would find in
a pizza shop.  Do not use the type intended for pizza.  Find New Mexico (hot)
crushed red peppers.  Better yet crush your own from dried red chile pods. Do not
remove seeds ~ it's cheaper!
