Cheddar Drop Biscuits

1 cup all-purpose flour
1½ tsp double-acting baking powder
½ tsp salt
2 tbsp cold unsalted butter, cut into bits
¼ lb Sharp Cheddar, grated coarse (about 1 3/4 cups)
½ to 3/4 cup milk

1.  In a bowl, sift together flour, baking powder, and salt.  Add the butter, and
blend the mixture until it resembles coarse meal.  Stir in the cheddar and add
enough milk to form a soft sticky dough.

2.  Drop the dough by rounded tablespoons onto a buttered baking sheet and
bake the biscuits in a preheated 425 degree F oven for 15 minutes, or until they
are pale golden.

About 16 biscuits

High Altitude   Unlike cakes and breads, biscuits should require no adjustment of
the leavening.
