Refritos I ~  Refried Beans (Pinto beans)

4-5 cups cooked pinto beans
12 strips bacon, minced
1 garlic clove minced
1/2 medium onion, finely chopped
1 cup shredded Chedder Cheese (optional)
Salt

Drain cooked beans of any excess liquid.

Do not discard excess liquid.  Fry bacon rendering the oil.  When bacon is crisp,
saute onion and garlic in bacon drippings (with bacon) until softened;  add the
beans (and cheese optional).  

Mash well with a potato masher, as you fry them.  Add a little liquid if they get too
dry.  Salt to taste

Use in or serve with any recipe calling for refried beans.

Serves 4 to 5
