Corona de Frijoles con Puerco ~  Crown of Beans with Pork ~ For a festive touch
make this Crown of Beans for serving at your next party.  By adding a little
Velveeta Cheese to the basic bean recipe you could use this to serve as a bean
dip.

Pork filling:
1 pound lean pork (boneless)
5 long green chiles, roasted
1 can whole tomatoes, chopped
salt & pepper to taste.

Refritos (Refried Beans)

For the filling:
In a large saucepan , cover the pork with water, bring to a boil, and simmer pork
for 1½ hours, or until tender.  Remove pork, allow to cool, and shred pork into a
bowl.  In a blender, puree, the chiles, and the tomatoes.  Mix the puree with the
shredded pork, salt & pepper to taste.

For the beans:
After beans are cooked:
Add:
4 long green chiles, minced
¼ tsp oregano to the beans.

Heat beans until heated through.  Pack the warm beans into a 4 cup (metal)
ringmold.  Smooth the top, cover with aluminum foil, and bake at 350oF. for 20
minutes.

Garnish:
½ cup shredded cheddar (or your choice) cheese.

Assembly:
Reheat the pork filling, un-mold the beans, fill the center with the pork filling.  
Garnish with shredded cheese.
