| Bamboo Shoot Adobo ~ This recipe combines shrimp, pork and bamboo shoots for a delicious Filipino dish. Visit Filipino Foods http://www.filipinofoods.info/ 3 cups labong (bamboo shoots), minced ½ cup pork, boiled tender and minced ½ cup shrimp, minced 5 segments garlic, chopped 4 tbsp vinegar 1½ tbsp patis (fish sauce) 1 medium-sized onion, chopped 2/3 cup shrimp and meat stock 5 tbsp fat (substitute with oil) 1. Brown garlic and onion in fat. Add pork and shrimp. Continue cooking mixture in fat, stirring constantly until shrimp are almost cooked. 2. Add patis and stock and then labong (bamboo shoots). Simmer until labong is cooked and then add vinegar. 3. Continue simmering until almost all liquid has evaporated. Add fat and cook about 6 minutes more. Season to taste. |
