Dendeng Balado ~ Spiced Dried Meat Strips ~ Online picture

Ingredients:
1 lb beef ( paha = thigh )
1 lime or magrood lime, squeezed for juice ( jeruk nipis = lime)
salt to taste (garam = salt)
oil for frying ( goreng = fried )
100 g red chile (3 1/2 oz)
1red onion, sliced ( or shallot  )
1 tomato, sliced (tomat merah = red tomato)


Clean & remove the veins; cut the meat into very thin slices.  Cut with the grain.

Marinate with salt, water and lime.  Allow to dry in the sun until quite dry.
(resembled dendeng).

Cut meat into 6 x 6 cm pieces; fry in hot oil.  Allow to dry. (6 cm = 2.36 (2 & 1/3) inch)
Sauté the red chile, the shallot, salt and tomatoes.  Stir-fry with 50 cc (a little over
1/4 cup) oil until fragrant and cooked.  Tomato mixture should look a little dry.     
(10 cc = 0.338 oz)

Place meat in a serving dish, add tomato mixture over the top.  Serve.
